Ingredients: • 3 ounces of the olive oil • 1 nice piece of the freshly thawed frozen salmon • one lemon juice • 1 teaspoon of the lemon zest • 3 to 4 dashes of the liquid smoke • 1or 2 dashes of the soy sauce but optional • Pepper and Salt

First, blend the olive oil, lemon zest, lemon juice, soy sauce, and liquid smoke in the small bowl.

You need to baste a top side of the salmon with a sprinkle and marinade, with pepper and salt, and then place on a fairly hot well-oiled grill on the skin side up.

Then grill 2 to 3 minutes until you get a nice grill mark on the salmon. Baste your skin side then turn the salmon. You can cook 4 to 5 minutes while you baste topside again. Cook another 2 to 3 minutes until it is done but be sure of not overcooking the salmon. You can then serve your food.
